Delicious Vegan Tofu Salad


Easy. Healthy. Yummy. What's not to like?

One 14oz container of Organic Firm Tofu, drained and pressed dry
1 celery stalk
5 small-medium radishes
1 handful spinach
2 whole green onions
1/4 tsp salt and pepper
1/2 cup Veganaise- guilt free!
a dash of hot sauce

After pressing the tofu, cut it into a small/medium dice and put it into a medium size bowl. Chop the celery, radish and green onion into small pieces, add to tofu. Cut the spinach into small strips, add to tofu mixture. Add salt, pepper, Veganise and hot sauce. Mix with a spatula until the veggies and tofu are coated- it's okay if the tofu breaks down a bit while mixing. Adjust salt/pepper/hot sauce to taste. Delicious on whole grain bread or as a dip.

Reduce, Reuse, Recycle Onions

Instead of throwing away the ends of you onions, recycle them! You can either plant it in your garden right away or put it in a bowl of water and watch the roots grow.


Voila, here are mine! The first two are leeks, then two green onions and the one in the very back is a red onion. Pretty cool, huh?!

Farming in Ireland













Hello from Ireland! Farm life was awesome. I loved working and living off the land. I had the freshest, tastiest veggies ever- the food was delicious! Here are a few photos from my time farming. I'll definitivly be posting more now that I have internet access! Well, I'm spending the weekend in Killarney, Co. Kerry and then heading to Dublin till I come home! Traveling goes by too fast.

Healthy-er Zucchini Bread



Zucchini Bread is so misleading. Even though it's packed with veggies, it's always too oily and overly sweet. So, I decided to tone it down a bit without messing up what everyone loves about Zucchini Bread! It's just as tasty and has an even better texture due to the oats.  Don't feel bad when you've already made four loaves in one week... like I did!

And it definitely helped get rid of my over abundance of zucchini from my garden!

3 eggs
1 cup sugar
1/2 cup brown sugar
1/2 cup oil
1/2 cup apple sauce
1 tsp vanilla
1 tsp cinnamon
1/4 tsp nutmeg
1 tsp salt
1 tsp baking soda
1/4 tsp baking powder
2 cups grated zucchini, green or yellow
2 cups all purpose flour
1 cup whole wheat flour
3/4 cup rolled oats

Beat eggs until foamy in a large mixing bowl. Add all other ingredients and mix completely together. Put batter into two greased  9 x 5" loaf pans. Bake at 350 for 1 hour or until a toothpick comes out clean.

Zucchinni Cocoa Muffins

I have a problem... like it's out of control...I have too many zucchini growing in my garden. So, I've decided to take charge in this situation and change it for the better. My plan: bake lots of these muffins. They're moist, chocolaty, easy, and somewhat healthy... right? Yeah totally.


1/3 cup boiling water 
2 cups shredded zucchinni and/or crooked neck squash
1 1/2 cups flour 
1/2 cup cocoa 
3/4 cups sugar
1 1/4 tsp baking soda 
1 tsp salt1 tsp cinnamon 
1/2 cup vegetable oil 
3 eggs
1 Tbl vanilla
*If you need an extra dose of chocolate add 1 cup chocolate chips

Preheat oven to 350 degrees. In large bowl, pour boiling water over zucchini. Add all other ingredients and stir just until well combined. Line muffin pans with paper muffin cups, and use a 1/4 cup measure to pour batter into cups. Bake for 30 minutes. You should get 16-18 muffins.

A Must Have...


If you love cookbooks this is a must for your collection! Easy ways to prepare a variety of veggies that are absolutely delicious is what you'll find. I've struggled to want and be able to prepare foods like bok choy, turnips and beets but after reading Fast, Fresh & Green, it opened me up to understand the easy and best ways to cook those foods. 

Last night I cooked Roasted Turnips and Pear with Rosemary-Honey Drizzle from Fast, Fresh and Green. All I can say is awesome! The rosemary and honey highlighted the bosc pears and turnips that were cooked crispy and tender. It had a wonderful sweet but savory taste. I felt like the flavor combination of fruit and root was very creative!
